Isolation and taxonomic study of termotolerant yeast strains producers of D-amino aciod oxidase

Fourteen years strains were isolated from traditional Bulgarian dairy products and characterized taxonomically. Morphological, cultural and physiological tests were carried out resulting in determination of the strains to species. The aim of our study was to screen for new termotolerant yeast producer of D-amino acid oxidase, able to assimilate lactose as a single carbon source. Nine of the isolated yeast strains are termotolerant and assimilate lactose as a single carbon source, possess high D-aminooxidase activity and belong to the species Kluyveromyces marxianus.
