Evaluation of long term storage of apples by means of fractal analysis

The aim of this study was to evaluate the effect of dosage of fertilizers, irrigation methods and storage duration on the changes in apple flesh texture during long-term storage. Four different groups of Idared apples were evaluated by fractal analysis. The values of fractal dimension decreased with increasing storage duration. The time course of the decrease varied according to the apple group. The influence of long-term storage and fertilization on the fractal dimension was also confirmed by analysis of variance. There was a relation between the values of fractal dimension and the results obtained by organoleptic analysis. The values of fractal dimension decreased with increasing intensity of apple flesh quality descriptors. Our results show that structural properties of stored apples may be evaluated by one parameter, the fractal dimension.
