Fortifying with dietary fiber improves the structural properties, water absorption and shelflife of the products. Soluble fiber has been proven to reduce blood cholesterol levels, thus helping to reduce the risk of heart disease. Fiber increases stool weight and improves laxation, maintaining regularity. Dietary fiber also functions as a prebiotic, increasing the number of benefical microflora in the gut and enhancing the gastrointestinal system and immune system. Fiber has been associated with preventing certain types of cancer, such as bowel and breast. Inulin has been shown to improve calcium and magnesium absorption in post-menopausal women.
