Production and characterization of fungal chitosan under solid-statefermentation conditions

A method for the laboratory-scale production, isolation, and characterizationof chitosan by solid-state fermentation (SSF) from different fungal strains weredeveloped. The maximum chitosan yield was 5.63g/kg of fermentation medium. Itwas attained by growing fungal strain Rhizopus oryzae on rice straw under SSFconditions for 12 days. Fungal chitosan, had a degree of deacetylation of 73-90%with a viscosity of 2.7-6.8 centipoises (cP). R. oryzae chitosan produced atconcentration of 60 mg/L exhibited the maximum antibacterial activity, comparedwith crab shell chitosan.
