Water activity of Thai maize and growth of Aspergillus flavus

Various moisture content of maize (Suwan 1) was used for the measurement of Water activity (Aw) by using an AW-Wert-Messer and prepared "Water activity-Moisture content" curve. Aspergillus flavus spore was inoculated to the same maize samples used in Aw measurement to observe their growth. Critical Aw for the growth of A. flavus is 0.85 (nearly 18 percent of moisture content) in 1 week inoculation.
