英语. The processing and baking performance of wheat flour is critical in production of high quality breads. Previous studies on organic flours have indicated that organically grown wheat produces flour with protein and gluten levels lower than conventionally produced wheat, which results in low baking volumes in yeast bread and rolls. The objective of this study was to evaluate organic flour quality and determine baking characteristics of the subsequent loaves. Four brands of organic strong white flour (B-E) were tested.
