The development of the pickles present and the raw material procurement behavior of the pickles maker

The purpose of this paper is to clear it about the development of the pickles manufacturing industry which attempts high value added, differentiation by being connected with local agriculture and the pickles maker's raw material procurement behavior. The pickled Ume in Wakayama and the pickled Mizunasu in Osaka which demand as a present are taken away as that case. The main conclusions of this paper summarized as follows: The pickled Ume in Wakayama and the pickled Mizunasu in Osaka establish a brand as an area speciality by farmers producing raw material of good quality and pickles makers manufacturing the good product of the quality in same area. Furthermore, buyers and wholesale markets inside these area plays an important part as an agency post of the raw material dealings. We think that it will be more important to promote an area speciality for the activation of the area economy from now on.
