Inhibition of growth of pathogenic bacteria by chitosan

Inhibition and inactivation of four pathogenic bacteria (Escherichia coli Staphylococcus aureus Vibrio cholerae and Salmonella Weltevreden), by chitosan were studied. Chitsan which has deacetylation number 90 percent and molecular weight of 10**(6) Dalton was used. The experiment were performed in vitro with chitosan concentration of 0 percent, 0.001 percent, 0.1 percent and 1 percent in 1 percent acetic acid. In vitro, the result showed that 0.1 percent chitosan could inhibit the growth of all four organisms. The growth of Staphylococcus aureus was inhibited even at 0.01 percent chitosan. The effectiveness of chitosan against Staphylococcus aureus was the greatest, followed by Vibrio cholerae Salmonella Weltevreden and Escherichia coli respectively. The effect of chitosan is to inhibit the growth of organism in fish ball and to extend the lag phase of all four organisms when compared with control.
