Interaction of processing quality and production conditions of mercantile wheat

The paper was aimed at determining the effect of segregation of bread-improving varities and the content of hardly separable besatz. Six of the most common domestic varieties have been analyzed. The results were compared to the genetic potential of the same ones obtained from the field trials. The composition and the content of besatz (especially the content of kernels damaged by wheat bug) explained the deviations in quality. Also, the quality of individual varieties have been compared to the average quality of wheat crop 2003. It is important to increase the share of bread - improving varieties in the varietal structure of wheat. The reexamination of the official regulations regarding to the besatz content (kernels damaged by Fusarium sp. and wheat bug) is necessary.
