Mathematical model of the apricot kinetic osmotic drying

The aim of this paper was to establish an empirical model, which describes the kinetics of apricot osmotic drying. In accordance with the stated aim, the set of tests with variety Novosadska Rodna apricot halves were conducted. With regression analysis is establish mathematical model that will describes changes in apricot halves moisture during the osmotic drying process, depending on process duration and influential factors. The regression analysis was calculated on two mathematical models. The fitting adequacy assessment of chosen models was achieved by correlation coefficient. High value of correlation coefficient was obtained for one of the tested models and, therefore, it is consider the mathematical model is acceptable.
