Kinetics of osmotic dehydratation of carrots in sucrose solutions

The aim of this work was determination of possibilities for osmotic dehydratation of carrots. The second part of the work was investigation of process kinetics and possibilities for the use of Biswal equation. During osmotic dehydratation up to 70% of initially present water was removed. It was shown that Biswal equation gives good approximation of experimental results. Coefficient of determination (Rsup2) was in the range from 0.95 to 0.99 for water loss and between 0.88 and 0.99 for solid gain.
