Properties of Cacak [Serbia] plum cultivars suitable for drying

From the aspect of its nutritive value dried plum represents the most significant plum product. Due to the enlargement of prune assortment and the extension of drying season a few plum cultivars recommended for drying have been developed at Fruit and Grape Research Centre, Cacak (Serbia). The study included the following cultivars: Cacanska Rodna, Cacanska Lepotica, Valjevka, Mildora (newly developed cultivar, named and released in 2004) and Pozegaca, the standard cultivar. Mechanical and chemical composition of fresh plum fruits and their behaviour were evaluated. Plum fruits were dried in the experimental drier for the study of the process of convective drying, possession of the Cer factory, Cacak (Serbia).
