Exopolysaccharides from lactic acid bacteria

Lactic acid bacteria possess various functional characteristics which participate on the fomation of optimal qualitative charasteristics of fermented milk products and on the control of technology. One such characteristic is the production of polysaccharides. This review summarizes recent data on classification, chemical composition and the structure of exopolysaccharides, the methodology of isolation and quantification, exopolysaccharides production with some lactic acid bacteria and functional as well as technological properties of exopolysaccharides.
