In order to know an appropriated harvest indices in seed production of Choe Sawai and Choe Raya Chili pepper varieties, physiological maturities (PM) of both varieties were studied. The results showed that the PM of choe Sawai (short-fruit) was 37 days after flowering, while it was 43 days after flowering in Choe Raya variety. At this stage, their fruit color turned red and maximum seed dry weight was reached when seed moisture content of Choe Sawai (short-fruit) was 43.23 percent and those in Choe Raya was 44.55 percent.
