Study on the combined action of herbal extracts and gamma irradiation on the microflora of raw rabbit meat

The inhibitory effect of four plant extracts against the strains E. coli, St aureus and natural miroflora of raw rabbit meat was investigated. Rosemary and thyme extracts and their essential oils mostly inhibited the growth of all types of microorganisnms tested. As a result of raw rabbit meat treatment with thyme and rosemary extracts, it was observed reduction in the aerobic mesophyllic microorganisms by 1.96 log units and 2.56 log units respectively in comparison with the initial values.
