Changes of cellular structure of potato tuber parenchyma tissues during storage

The aim of this work was to review changes in the microstructure of potato tuber cells during storage and to compare these changes in two varieties, Andromeda and Pasat. Five tubers of each variety were analysed after harvest and after 6 months of storage. Cylindrical samples of 10 mm in diameter and 1 mm thick were taken out of two types of tissues - potato pith and internal parenchyma. Images of the tissues in natural state were obtained by optical confocal microscopy. A technique elaborated earlier by the authors was used to obtain images containing a number of cells sufficient for statistical analysis. Surface area of plane section of the cell and cell elongation were used for the comparisons. The surface area increased during the storage in both types of cells, but only in the variety Andromeda, whereas the storage period had no effect on cell elongation in any of the two varieties studied.
