Study on two extraction methods and physico-chemical properties of strach from potato cultivars in Golestan province

Six potato cultivars were grown in Agricultural Research Field of Gorgan in 1381-2. Starches were extracted from these tubers with two methods (extraction with water and with dimethylsulfoxide, DMSO) and their physico-chemical properties were investigated. Dry matter and starch content of potatoes were found to vary from 17.2 – 22 and 10.6 – 14.6 % (on fresh weight basis) and the maximum and minimum of these values related to Concord and Deraga varieties, respectively. No significant difference at reducing sugars was found among fresh potatoes. Starch yield, phosphorus content, viscosity and mean particle size were different among cultivars but amylose and protein content of starch had no significant difference. Starch yield with aqueous extraction was higher than extraction with DMSO. In addition, later method had no huge effect on amylose , protein and P content of starch but reduced the viscosity and mean diameter size granule of starch.
