Surveillance and characterization of enterotoxigenic staphylococci in foods of animal origin collected in the Veneto region

英语. In this study, the prevalence of coagulase positive and enterotoxigenic staphylococci has been tested in 3,784 foods of animal origin collected in Veneto region (Italy) during the year 2000. Moreover, biotypes and ribotypes of a selection of strains producing toxins have been analysed. The 34.6% of the tested samples was colonised by Staphylococcus aureus and 73.3% of them by strains producing enterotoxins. The main sources of enterotoxigenic strains were dairy and meat products and the most common toxins were A, C and D. The tested isolates were better discriminated by ribotyping (SID = 77%) than by biotyping (SID = 49%). [In questo studio è stata accertata la prevalenza di stafilococchi coagulasi positivi e di stafilococchi enterotossici in 3.784 alimenti di origine animale raccolti nel Veneto nel corso del 2002. Inoltre, sono stati analizzati i biotipi e i ribotipi di una selezione di ceppi enterotossici. Il 34,6% dei campioni analizzati è risultato colonizzato da Staphylococcus aureus e il 73,3% di questi da ceppi enterotossici. I ceppi enterotossici sono stati isolati soprattutto nei prodotti a base di carne e di latte e le tossine più comuni sono risultate la A, B e C. Gli isolati saggiati erano discriminati meglio mediante la ribotipizzazione (SID, indice di discriminazione di Simpson = 77%) rispetto alla biotipizzazione (SID = 49%). Inoltre, con la ribotipizzazione sono stati identificati profili genetici comuni fra ceppi isolati da alimenti diversi.]
