Characteristics of leaf ingredients of 'Iwatsunegi' [Allium fistulosum]

Characteristics of 'Iwatsunegi' were investigated by comparing with several cultivars of Welsh onion grown in the same season. (1) The contents of sugars, free amino acids and pyruvic acid in 'Iwatsunegi' leaves were high. The firmness of leaf sheath was softer than other cultivars. (2) The contents of sugars and free amino acids in 'Iwatsunegi' harvested on January 17 were higher than those harvested on December 14. Leaf sheath of the former tends to lose its firmness compared with the latter. (3) Leaf ingredient contents and leaf sheath firmness of 'Iwatsunegi' were susceptible to environmental conditions under which they were growing.
