Safety evaluation of cadmium contained in rice grains produced in Shizuoka prefecture [Japan] and cultural methods for reducing absorption from paddy soil

1. Fertility Maintenance Survey conducted in 1979 to 1997 suggested that most brown rice produced in Shizuoka prefecture contained cadmium at the concentrations lower than 0.20mg/kg, showing high level of safety. There was no correlation observed between cadmium content of paddy soil and that of brown rice. 2. Cadmium content of brown rice was reduced by flooding paddy field before and after the heading stage and keeping soil oxidation reduction potential at lower level. 3. Level of soil oxidation reduction potential after midsummer drainage could be estimated by hardiness of soil at the surface. 4. It was expected that soil amendment with organic materials reduced soil oxidation reduction potential.
