The aim of the study was evaluation of grain quality of spring wheat varieties at differentiated cultivation technology in dependence on weather conditions in the years of research (2001-02). In an experiment two factors were analysed: cultivation technology (extensive, conventional, intensive) and variety (Opatka, Hezja, Torka). The grain yields significantly depended only on the weather conditions in successive growing seasons. The most favourable was year 2002, the worst 2003 when obtained yield was by almost 60 percent lower than in 2001 and about 50 percent lower than in 2002. The gluten content significantly depended on the cultivation technology and variety. The falling number depended on the growing season and variety
