Meat quality of Pietrain and Zlotniki Spotted pigs and their crossbreds evaluated in 1969 and 1997

In order to determine changes in the meat quality traits and the frequency of normal and PSE meat over last 28 years, data were compared obtained in studies on meat quality in Pietrain and Zlotniki Spotted pigs and their crossbreds 75 percent Pietrain) conducted in 1969 and 1997. The analysis of mean value for the meat quality traits in particular pig groups showed that pH water-holding capacity and meat colour lightness were more favourable in Pietrain pigs and their crossbreds at present than in the earlier years, and the proportion of pigs with meat of good quality increased very markedly. It was also showed that a decrease, nearly a double one, occurred in the content of intramuscular fat both in Zlotniki Spotted and Pietrain pigs and their crossbreds during 28 years separating both experiments. Thus, the progress obtained while improving the pig performance traits did not have any negative effect on the meat quality traits
