Gel concentrates (GC) from plant raw material which are new for producing alcohol-free functional beverages are presented. GC include extractive substances of drug plants the properties of which provide the functional characteristics of beverages. People diseased of insulin-dependent mellitus diabetes can take the beverages that have fructose as a sweetener. Natural origin substances (gum arabic, pectine, apple cellulose) are used as stiffeners. Receipt, technologies and physical and chemical properties of GS are listed. Functional purposes of each alcohol-free beverage are determined: Kopeechinik Chajnj has tonic effect, Volodushka is slightly cholagogue, Solyanka Kholmovaya is hepaprotector, Krasnaya Shchetka is immunostimulator. GC are packed in laminate tubs, a modern waterproof wrapping. An alcohol-free functional beverage is prepared by follow: a teaspoon of GC is dissolved in one half or in one cup of boiling water by careful mixing. The beverage is taken hot or cool. The industrial production of beverages is organized by the company Art Life (Tomsk).
