The research of therapeutic and preventive and functional canned products from alternative fruit crops (AFC) (Viburnum, Sorbus, Aronia, Hippophan) is presented. AFC in general have raised content of vitamins C and P in compare with traditional crops, beside that they have specific components; for example , sea buckthorn oil has carotene, tocopherol; chokeberry has glycosoviburnin increasing blood coagulability and chlorogene acid; ashberry has carotene, sorbite; the content of vitamin P in Aronia is the highest among all fruit and soft fruit crops. Blending of basic crops and AFC is used for enriching by bioactive substances and for nutritive value increasing :thus, the ashberry Neveshinskaya adding into apple puree (1:5 correlation) has increased the content of vitamin C in 9 times (up to 22.9 mg per 100 g); the content of the vitamin C in apple and chokeberry puree (5:1) increased in 7.7 times (up to 27.9 mg per 100 g). The technical conditions for canned products Soft Fruit Jelly with Pulp are developed to supply pectin daily rate. Chokeberry and sea buckthorn have been also used to manufacture these canned fruits ; they can be ingested as food or be used as additives in confectionary industry. The dietary product with lowed sugar content Chokeberry Jelly with Pulp contained 85% puree, 2% pectin concentrate and 13% fructose is in development stage. The technology of sugar-free functional products from apples, pears and ashberries are worked up (for example, Diet Low-calorie Sugar-free Ashberry Jam). Beside pectin concentrate and ascorbic acid, the prebiotic lactulose is added into this product to increase its biological value.
