Listeria Monocytogenes in minced meat and thermally untreated meat products in Slovenia

We examined 44 samples of fresh minced meat (beef and pork), 28 samples of raw meat for ”cevapcici”, 25 samples of raw sausages, 57 samples of mechanicallydeboned poultry meat and 23 samples of fast fermented lasted sausages (prior to drying). Listeria monocytogenes was determined in 3 of the minced meat samples (6.81 %), 3 samples of the raw ”cevapcici” (10.71 %), 4 raw sausage samples (16.0 %), 9 samples of mechanically-deboned chicken meat (15.78 %) and 1 sample of the fast fermented lasting sausages (4.34 %). We present our analysis of the results, and suggestions for reducing contamination levels and protecting the consumer from L. monocytogenes alimentary infections.
