Microbiological quality of honey

Analyses have involved over 25 samples, which were collected from commercial lots of honey in various areas of Slovakia. In honey of bees we detected increased number of coliforms bacterias and microscopic fungi. Results of our experiments shows, that from monitored groups microorganisms in 25 honey samples were microscopic fungi in amount from 10 to 4,000 cfu per g. Of insulated species composition fungi were the most frequently genera Rhizopus and Penicillium. From 25 samples of honey (Slovak origin) eleven was bacteriologically positive after 4 day anaerobic cultivation at 37 deg C in cystein containing TPGY broth. However there were no positive results for Cl. botulinum with using both PCR protocols. As a positive control we used 16 S rRNA primers for the same DNA samples. The next aim will be to continue with further PCR investigation of honey samples.
