Study on grain damage and comparision between wheat cultivars in province based on baking quality and protein increase

A research was conducted to study the protein increase and grain damage decrease and bread quality via cultural mangement treatments including 1) chemical control + nitrogn fertilization, 2) without chemical control and nitrogen, 3) nitrogen and 4) chemical control, using Paired Sample T-test on common cultivars of province in two areas, Buin-Zahra and Qazvin. Flour deposite, breas volume, seed hardness, water absorption, wet and dry Glutine ad protein content, were measured. According to results, fertilization in flowering stage caused seed protein increase and seed sunn grain damage decrease. Non- fertilization treatment seprated from the others in cluster analysis. Flour deposite, bread volume, water absorption, wet and dry Glutine correlated positively and significnatly and grain damage negatively with seed protein. Highest wet Glutin content was in fertilizer + pesticide (41.33%) and lowest in non- fertilizer + non- pesticide (28.60%) treatments. The highest yield (6596 kg/h) and protein content (12.09%) were recorded in fertilizer + pesticide and lowest (5156 kg/h and 11.32% , respectively) in non- fertilizer+non-pesticide treatment. Tade analysis was done by means of SPSS software.
