The objective of this research is to introduce Chinese red radish, a new crop with high functional value, in Uwaba highland area of Saga, Japan. The effects of cultivating conditions on the quality of Chinese red radish were investigated trough 2005 to 2008. The sugar content (Brix value) in Chinese red radish was about 1 to 1.5% higher, and the polyphenol content was about two times higher compared with those in normal radish. In 2007, during the radish swelling, the temperature was higher and the precipitation was lower compared with other years. The high temperature was considered to cause low sugar content in both Chinese red and normal radish, however, the dry soil condition might contribute to the high polyphenol content. In the sunlit chamber experiment, low temperature caused the high sugar content, but polyphenol content was not affected by either high or low temperature.
