Proximate Composition and Minerals, Phenolics, Anthocyanins Pigment Characteristics on the Parts of Sweetpotato

For the investigation of Hayanmi's nutrition value, this study was conducted to analyze the proximate composition, vitamin, minerals, phenolic compound and anthocyanin pigments in tuberous(storage) root, shoot tips, leaves and petiole. Results of analysis of proximate composition, energy was 367 Kcal for storage root and in the range of 299~346 Kcal for leaves, petiole and tips. Carbohydrate was 88.1 g/100 g for storage root and 51~67 g/100 g for aerial vine. Tips were 20.0 g/100 g in protein content, that was more than 7.1 times compare with storage root.
