The article describes development of visual methods of estimation degree to fruit tomato maturity. Visual methods are founded on analysis of light characteristics. The modified method is based on spectral crooked reflections of the surfaces of tomato fruits, spectral feature of a human eye and spectral characteristic of glass colour-filter. Tomato fruits with tangerine, beta-carotene and lycopene pigment complexes (the varieties Ruslan, Luch and Lyana respectively) have been tested for determining alpha, beta chlorophyll and carotenoid content. Sets of colour-filter PS-11 with 2HS-12 or SS-4 with ZHS-16 slice from spectral range of the visible light, the most sensitive for an eye wave length interval from blue-green to green-yellow and enlarge color sharpness of an eye. Fruit reflection coefficient in the red interval (more than 640 nanometers) changes significantly depending on maturity degree. So, red and brown fruits will be seen as red and pink ones through the mentioned filters, milk and green fruits will be done as blue-and-violet or black ones. This method allows visual sorting of tomato fruits on degree of maturity and selecting the fruits of milk maturity suitable for long storage or transportation on long distances as well the fruits of full biological maturity for production of tomato paste, juices and others. This method can be successfully used for estimation of other crops (lemons, oranges, tangerines, melons, pepper etc.)
