Objectives of this research were to study the influences of rice cultivars, planting medias and harvesting periods on growth and chlorophyll content in young rice grasses of two rice cultivars (Khao Dawk Mali105, KDM105 and Pathumthani1, PT1). The result showed that KDM105 provided better growth than PT1. Growth rate of both rice cultivars which were planted in soil is higher than growth rate of those which planted in perlite. Rice cultivars, planting medias and harvesting periods affected chlorophyll content. Young rice grasses of PT1 provided higher chlorophyll content than those of KDM105, and young rice grasses of rice that were grew in soil had higher chlorophyll content than those whice were grown in perlite. Young rice grasses of rice which were grown for 2 and 3 weeks presented the highest chlorophyll content (2.01-2.07 mg/g), however these differences were not significant. Young rice grass extract is yellowish-green color. The a*-value were in the range of - 8.99 to -13.64.
