Sanitary quality of eggs for human consumption | Calidad sanitaria del huevo para el consumo humano

Se realizó un estudio de la calidad sanitaria de 2668 huevos de consumo procedentes de unidades avícolas remitidos al Departamento de Bacteriología del Laboratorio de Investigación y Diagnóstico Aviar de la provincia de Matanzas durante 4 años, mediante la metodología establecida por el Laboratorio Nacional de Higiene de los Alimentos del Ministerio de Salud Pública para la tipificación de salmonellas. No se halló Salmonella enteritidis, S. typhifimurum ni S. gallinarum. Los resultados señalan que en los huevos hubo un bajo índice de crecimiento bacteriano y sólo en el 2.21% de ellos se aislaron enterobacterias, lo cual corrobora que el plan de vigilancia y lucha contra las salmonellas se desarrolla eficientemente.

英语. A study of the sanitary quality of 2668 eggs for human consumption coming from poultry units was carried out during 4 years. The eggs were sent to the Department of Bacteriology of the Laboratory of Poultry Research and Diagnose of the Province Matanzas. The analysis was carried out by means of the methodology established by the National Laboratory of Food Hygiene of the Ministry of Public Health for typification of salmonellas. There was neither evidence of Salmonella enteriditis, nor S. thyphifimurum and S. gallinarumn in the lot sent. Results show that in the eggs there was bacterial growth index a reduction. Further, in only 2.21% of the eggs were isolated enterobacteria. This confirms the efficiency of the protection and struggle carried out on salmonellas.
