At present, the inspection controls established for the Iberian pig are based upon "on farm" inspector visits and fatty acid analysis done in one fat sample taken from a group of animals from the same producer. That system is very time consuming and expensive, and not objective enough to fulfill the increasing consumer demands from regional, national, and international markets. Another downside of the system is that it does not provide information about the production and quality of each individual ham. The main aim of this paper is to demonstrate the potentiality of NIRS for the "in-situ" and "on-line" analysis of live animals and carcasses. The results obtained show that accurate predictive discriminant models can be developped to discriminate among animals and carcasses according the feeding system. The discriminate models correctly classifies more than 90% of animals, carcasses and adipose tissue, reaching the maximum value of 96.58% in carcasses analised at the slaughter line.
