The composition of volatile aromatic compounds of spice crops cultivated in Latvia – basil, thyme, and oregano have been investigated and compared with the chemical composition of basil, thyme and oregano essential oils offered in commercial network. These spice crops are used for oil aromatisation. The extraction level of volatile compounds of oils aromatised by the spice crops and impact of aromatisation conditions on quality of aromatised oils has been determined. The research was carried out at the Faculty of Food Technology of Latvia University of Agriculture in cooperation with Ghent University (Belgium).

LLU Pārtikas tehnoloģijas fakultātē, sadarbībā ar Ģentes Universitāti (Belģija) pētītas Latvijā audzētu garšaugu – baziliku, timiānu un oregano gaistošo aromātisko savienojumu sastāvs un iegūtie rezultāti salīdzināti ar komerciālā sistēmā piedāvāto garšaugu – bazilika, oregano un timiāna ēterisko eļļu ķīmisko sastāvu. Bez tam, šie garšaugi izmantoti eļļu aromatizēšanai. Ar garšaugiem aromatizētajām eļļām noteica gaistošo savienojumu ekstrakcijas pakāpi un aromatizēšanas apstākļu ietekmi uz aromatizēto eļļu kvalitāti.
