Rambutan (Nephelium lappaceum Linn.) processing and utilization: rambutan prunes

Rambutan trees grow abundantly in the province of Aklan. The surplus is the highly perishable rambutan fruit, usually translates to wastage. This research endeavors to reduce the full wastage, help augment the rambutan farmer's income and generate employment in the locality. It is focused in the development of dried candied rambutan or prunes. Experiment were conducted from September 2005 to October 2006 at the Bachelor of Science in Home Technology (BSHT) Laboratory Room 1 and 2 of the Aklan State University. The following treatments were used: A (20 min. cooking time and 20 min. drying time), B (40 min. cooking time and 40 min. drying time), and C (60 min. cooking time and 60 min. drying time). Fifteen students and fifteen faculty members (mothers) of the University were purposively chosen as members of the sensory panel. Material balancing as well as cost analysis was also included in the study. Results of the sensory evaluation showed that the developed rambutan prunes is a highly acceptable products. From the material balance, 3.62 kg of rambutan prunes was recovered from 10 kg rambutan fruits and 12 kg syrup. Rambutan prunes can be sold in the market for as low as Php 93.38 per kilo, 47% less than the commercially available prunes and raisins currently priced at Php 200.00 per kilo.
