Sensory analysis is indispensable procedure in food analysis. Satisfying results of sensory analysis can be obtained if necessary conditions are met, if analysis is performed by chosen, trained and educated analysist and if their results are constant. Added value of sensory analysis is gained by specific preparation and presentation of samples as well as the choice of used method in sensory analysis. ISO standards define all of the above required conditions. These standards facilitate the objectiveness of sensory analysis, which enables it to be used in everyday expert work in laboratory as well as in research work.
