The present review provides an outline of the current knowledge of trans fatty acids (TFA) including their structure and formation, occurrence in foods, especially in meat and meat products, and some estimation and evaluation of daily intake. Special emphasis is put on conjugated linoleic acids (CLA), related to unique beneficial physiological properties, such as an cancer inhibition via immune system.
