The purpose of this study was to examine the influence of total bacteria count and somatic cells count in bovine bulk milk on yield of semihard cheese produced in creamery ZZ Cijevna, Podgorica (Montenegro). The total bacteria count was examined by Bactoscan FC 100 and somatic cells count by Fossomatic 5200. The actual cheese yield was determined on the base of milk quantity and the produced cheese, and was expressed in percentages. The average value of total bacteria in analyzed samples was 2,384,000/ml and the number of somatic cells was 525,000/ml. The actutal cheese yield was 11.26%, for quantity of milk 414.3 l and weight of cheese 46.66 kg. The average positive correlation was determined between total bacteria count and somatic cells count in milk (0.549317), and between the total bacteria count and quantity of milk (0.539122). The average negative correlation was determined between total bacteria count and the actual cheese yield (-0.6755). The results have showed that the total number of microorganisms has an important negative influence on cheese yield.
