Thirty five potato varieties are tested to be suitable for processing. Their biological and agronomic characters are estimated according the conditions of the Ryazan Region. The zoned varieties Red Scartet, Romano, Ehlizaveta, Peterburgskij and the prospect one Pransa are found to be good for processing. Krinitsa, Skazka and Nayada are suitable for starch production. Biological preparations Ehpin-Ekstra, Silka, Krezatsin and Tsirkon are used during potato storage and they show a high protecting and stimulating effect. At this total losses reduce by 3.06-7.03%, a speed of reducing sugar accumulation decreases in 1.2-1.8 times and the one of free amino acid does in 1.3-1.9 times inside treated tubers. During 8 months of storage losses of potato dry matter, starch, protein and vitamin C lower by 1.6-4.0, 1.9-3.6, 0.01-0.04% and by 0.9-1.8 mg% respectively. Preplanting treatment of potato virus-free tubers by incoherent red light (IRL) in combination with ozone allows to protect them from recontamination and to increase their quality. The treated tubers contain nitrates in the amount less by 15.3-16.5%. It is found out that reducing sugar content lowers by 0.13%, a percentage of big and medium starch grains increases by 3.8-7.2% in compare with untreated tubers. Potato pulp becomes more resistance to darkening and quality of crispy potato improves by 3It.6-3.9 points. It is recommended to treat potato tubers before placing them for storage by Krezatsin (2 milli liter/1000 kg), Tsirkon (0.5 ml/1000 kg). It is recommended to treat seed potato by IRL of 540-680 nano meters wave length and doze 90 joule/square meter and by ozone in concentration of 350 mg/cubic meter.
