The fermentation of starch-containing raw material was carried out with inoculating alcohol yeast activated with a dandelion extract (DE) in an amount of 0.2, 0.4, 0.6 and 0.8% of the total amount of the suspension. At a dose of DE of 0.2% there were no great changes in fermenting activity of yeast, at 0.4% of DE it increased by 17%, at 0.6% - at 13%, at 0.8% - by 11%. The fermentation process of rye wort was reduced by 8 h in the experimental sample having 0.4% of DE. An analysis of chemical and physical parameters of fermented wash has found that the mass concentration of unfermented carbohydrates decreased by 0.13 g/100 sq. cm, the weight portion of unsolved starch reduced by 0.07%, the concentration of dry matters decreased by 2%, the active acidity increased by 0.2%, and titrating acidity increased by 0.4 degrees compared to the control. An analysis of samples of wash distillate by gas chromatography has found that a total amount of volatile impurities of alcohol were reduced by yeast activated with 0.4% DE. Compared to the control the content of such components of fusel oil as isobutanol and isomidol, as well as impurities of acetaldehyde was reduced to a greater degree. Thus, the activation inoculation yeasts with a 0.4% DE intensifies the fermentation process, improves the quality of fermented wash, enlarges the yield and quality of finished product – ethyl rectified alcohol
