Mathematical modeling of consumer qualities of bulk grain during storage is the useful tool for grain storage management. It can be applied to asses the current quality of grain (diagnosis), to predict the risk of future deterioration and to give the substantial help in storage management to minimize quality loses. In this work the possible application of the developed mathematical model of consumer qualities is shown. The program complex is made on the basis of heat and mass transfer theory in capillary-porous materials and multiphase filtration with applying mathematical tools of synergetic analysis of multi-stable systems. The prediction of merchandising and technical characteristics of paddy during storage is offered (total gruel output, proportion of broken and unbroken cereal kernels, fungi and bacteria, germination power, glassiness and fissuring). The program complex includes model of heat and mass transfer processes in the grain bulk, supplemented by regression dependences of these parameters from temperature, grain moisture content, and chemical composition of intergrain atmosphere
