The development of a range of confectionery products for environmentally unfavorable regions (pollution by radionuclides, heavy metals, pesticides) is carried out using radioprotective supplements (beta-carotene, vitamin C, calcium-containing components), detoxicants with adsorbing properties (dietary fiber (DF)), vitamin-mineral premixes. A marmalade (MM) was selected as a base for confectionary products which are prophylactic for environmentally disadvantaged areas. An analysis of the nutritional value of different groups of MM was done and the follow MM were found out to be carriers of DF: as jelly and fruit MM on pectin and agar, jelly tin-formed MM on pectin and agar, jelly MM-cut on pectin and agar. The jelly fruity MM on pectin (0.6-2.5 gram) and jelly and fruit MM on agar (0.8-2.2 g) contained the maximum number of DF in 100 gram of a product. The last was chosen as a basis for enrichment of MM. A powder from pumpkin (PP) was selected as additives for removing radionuclides and heavy metals. The data on chemical composition and calorific value of PP obtained from different manufacturers were presented, as well as a content of nutrients in the base-in MM Majskij and in the developed MM Radostnij enriched with PP. The technologies for MM Radostnij production are developed: the methods of casting, pressing with syrup and pressing without it. The methods can be used in different types of the forming equipment, are able to reduce the boiling process, structure forming and desulfitation, as well as to reduce the consumption of sugar by 72%
