The effect of corn variety and the treatment with alcohol added steeping water on some quantitative properties of fried corn snack | Mısır çeşidi ve alkol katkılı suda ıslatmanın, yağda kızarmış mısır çerezinin kalitatif özelliklerine etkisi

In this research, fryed corn snack was produced by treating a steeping water four level of alcohol concentration (0, 10, 25 and 50 %) before frying on three corn varieties (Akdeniz, Pioneer 3245 and Pioneer 3394). The hardness, color intensity, water and oil content, end product yield and sensory properties were the parameters which have been analyzed. Corn variety and alcohol treatment had a significant (p0.05) effect on the hardness value. The hardness of the corn snacks not treated with alcohol solution were found higher values. According to the sensory evaluation results, the effect of corn variety and alcohol concentration of steeping water on hardness value was found significant at p0.01 and p0.05 levels, respectively. The brittleness value of the snacks produced from Akdeniz corn variety was found the lowest as compared to other varieties. The crispy and delicious corn snack product was obtained from the corn varieties with soft grain and the increasing alcohol concentration of steeping water gave rise to crispy product formation. The most crispy and delicious product was obtained from the Pioneer 3394 corn variety treated with steeping water having 25 % alcohol concentration whereas the treatment caused product yield to decrease (p0.05). The alcohol concentration of the steeping water did not affect the product yield.

Bu araştırmada, laboratuvar koşullarında üç ayrı mısır çeşidi (Akdeniz, Pioneer 3245 ve Pioneer 3394), kabuğu soyulduktan sonra dört farklı oranda (% 0, 10, 25 ve 50) alkollü suda ıslatıp, kurutulup, yağda kızartılarak mısır çerezi üretimi gerçekleştirilmiştir. Üretilen mısır çerezlerinde sertlik, renk değeri, su miktarı, yağ miktarı, mısır çerezi verimi ve duyusal analizler parametre olarak kullanılmıştır. Mısır çerezlerinin sertlik değerleri üzerinde mısır çeşidi ve ıslatma suyu alkol seviyesi etkili bulunmuştur (p0.05). Alkollü suda ıslatılmayan mısır çeşitlerinden elde edilen çerezlerin diğer gruptakilere göre daha sert olduğu belirlenmiştir. Duyusal analiz sonuçlarına göre mısır çerezlerinin gevrekliği üzerinde mısır çeşidi (p0.01) ve ıslatma suyu alkol oranı olumlu etkide (p0.05) bulunmuştur. Akdeniz mısır çeşidi kullanılarak üretilen çerezlerde gevreklik değeri diğerlerinden düşük bulunmuştur. Sonuç olarak yumuşak daneli çeşitlerin daha gevrek ve lezzetli mısır çerezi verdiği, ıslatma suyundaki alkol oranı arttıkça da gevrek ürün elde edilebileceği görülmüştür. Pioneer 3394 mısır çeşidinin %25 alkollü su ile ıslatılarak en gevrek ve lezzetli ürün verdiği, buna karşılık ürün veriminin düştüğü belirlenmiştir (p0.05). Islatma suyundaki alkol oranı ürün verimini etkilememiştir.
