Tomato paste industry in Turkey and price changes in domestic market | Türkiye'de domates salça sanayi ve iç piyasada fiyat değişimleri

While tomato paste production in Turkey was focused on exports until recent years, the importance of domestic markets was increased with competitive world market conditions and increasing domestic consumption. In this study, tomato paste industry was examined regarding to their structure from raw materials to the exports in terms of production, export and domestic prices in 1994-2009 period. It was observed that tomato paste prices have tend to decline from 2003 according to long term averages and when it was compared the prices of tomato and tomato paste as tomato equivalent, tomato paste prices was cheaper approximately 45%.

Türkiye'de domates salçası üretimi son yıllara kadar ihracat odaklı bir yapıya sahipken, dünya piyasalarındaki artan rekabet koşulları ve yurtiçi kullanımın artması ile iç piyasanın önemi daha da artmıştır. Bu çalışmada domates salça sanayi hammaddeden ihracata kadar genel yapısı itibariyle anlatılmakta ve 1994 - 2009 yılları arasında üretim, ihracat ve yurtiçi tüketici fiyatlarındaki gelişmeler incelenmektedir. Domates salçası fiyatlarının 2003 yılından itibaren uzun yıllar ortalamasına göre azalma eğiliminde olduğu ve domates eşdeğeri olarak domates ve salça fiyatları karşılaştırıldığında ise salça fiyatlarının yaklaşık %45 daha düşük olduğu ortaya çıkmaktadır.
