Impact of feeding Systems of Dairy cows on characteristics of ras cheese

英语. Milk samples were collected from dairy cows herd to study impact of three feeding systems on their suitability for making a good quality Ras cheese. The attained results revealed that the differences in TS, fat and protein contents of cheese milk due to the applied treatments were significant with the highest values in milk from treatment (I) followed by those from treatments (II) and (III) respectively. The corresponding values for the yield of fresh cheese were 14.49, 13.76 and 12.42% and for the ripened cheese were 12.32, 11.56 and 9.89% respectively. The six months old cheese from treatment (I) contained the highest values of moisture, fat/DM, protein/DM, salt/DM, TVFA, SN/TN and NPN/TN. These figures were accompanied by the highest scoring points for flavour (50.6 out of 60 points), body and texture (28.8 out of 30 points) and appearance (9.6 out of 10 points). Less scoring points were given for the sensorial properties of cheese of the same age from treatments (II) and (III) respectively

西班牙语; 卡斯蒂利亚语. Las muestras de leche se obtuvieron de un rebaño de vacas lecheras para estudiar la idoneidad de tres sistemas de alimentación para hacer queso ras de buena calidad. Los resultados obtenidos revelan que las diferencias en los contenidos de de la leche del queso debido a la aplicación de los tratamientos fue significativa con los valores más altos en la leche del tratamiento (I) seguidos de los tratamientos (II) y (III) respectivamente. Los valores de rendimiento para el queso fresco fueron: 14,49, 13,76 y 12,42% y para el queso curado fueron 12,32, 11,56 y 9,89% respectivamente. A los seis meses el queso del tratamiento (I) contenía los mayores valores de humedad, grasa/DM, proteína/DM, sal/DM, TVFA, SN/TN y NPN/TN. Estas cifras fueron acompañadas por la mayor puntuación para el sabor (50.6 de 60 puntos), cuerpo y textura (28.8 de 30 puntos) y apariencia (9.6 de 10 puntos). Menores puntuaciones fueron dadas para las propiedades sensoriales del queso con la misma maduración para los tratamientos (II) y (III) respectivamente
