Influence of apples cultivars on polyphenolic compounds and antioxidant activity in cloudy juices

The usability of chosen apple cultivars to production of naturally cloudy juices in terms of polyphenolic content and antioxidant activity was tested. In products polyphenolic content was marked by Folin-Ciocalteau method generally; the scavenging force of DPPH radical, antioxidant activity by ABTS method and degree of ferric reducing ability of plasma (FRAP) were measured too. Researches proved, that cultivar has influence for content of polyphenolic compounds and antioxidant activity of cloudy juices. The products with the best features for human's health were made from Ozark Gold, Szampion or Szara Reneta cultivars.
