In a two-year cultivation of sweet pepper Delphin F1 cultivar, the effect of plant nutrition with compound fertilizers on the sweet pepper fruits quality was compared. The following fertilizers were applied: coated slow-release fertilizer Osmocote Plus 10-11-18 and two quick-acting fertilizers: Peters Excel and Peters Professional. The original composition of fertilizer components was preserved, only the application dose of 10 g N per plant was introduced. Harvest of fruits was carried out in two developmental stages of fruits: in the phase of the harvest maturity (fruits with green colour) and in the phase of physiological maturity (fruits with red colour). It was found that both the fertilizer types applied for sweet pepper, as well as the phase of fruit maturity exerted an influence on the biological value of fruits. The application of Peters Professional showed in result the highest content of dry matter and sugars in the fruits. Peters Excel, on the other hand, increased the amount of extract in the red fruits. Osmocote Plus fertilizer increased the content of vitamin C. All analysed parameters of biological value were higher in fruits harvested in the phase of physiological maturity (with red colour)
