Breast meat quality (nutritive, technological and sensory) of chicken fed mixture with different amounts of rapeseed meal was investigated. Chickens of hybride line ROSS 308 were used. The control group (K) was fed standard mixture, and the experimental groups with mixture where soybean meal was substituted with 4% (O1) and 8% (O2) of commercial rapeseed meal. The change of meal composition has no influence (P is greater than 0.05) on nutritive (content of proteins, proteins of connective tissue, free fat) and sensory (odour and colour) quality of breast meat. The technological breast meat quality of control and experimental groups is in accordance with somewhat lower, on average, according to parameters and criteria for the determination of breast meat quality (colour sub(u), pH sub(u), water holding capacity sub(u)). The analysis of lightness L* showed that the colour of breast meat of control group (O2), fed mixture with 8% of commercial rapeseed meal, is lighter (P = 0.106) i.d. of PSE quality (pale, soft, exudative) compared to breast meat of control group (O1).
