On interior surface of water pipes, hoses and other places in food industry plants it is possible to notice some mucous deposites. This unusual deposit commonly comes from microorganism (usually bacteria) and is called biofilm. The conditions for initiation and development of biofilms in food industry plants are very convenient. The development of biofilms in moisture environment is different then the traditional knowledge about plankton organism. By using a new material (hydrophobic and/or polish) the biofilm genesis in food industry was neglected in a short time. However, numerous scientific papers and practical experience show that biofilms are a significant problem even if industry plants are equipped above standard demands. One of the main reasons why knowledge about biofilms is not commonly accepted is the unsuitable concept about microbiology determination that is focused in plankton bacteria. This concept is used in industrial and exterior laboratories in process control. The aim of this work is to present the actual knowledge on biofilm genesis and development in industrial environment, as well as their sanitary, ecology and economic importance. Also, the point is to indicate a way of microbiology analysis when biofilms existing is confirmed or there is a doubt about biofilms.
