英语. As a feedstock for the production of sushi and rolls carp meat was used. Muscular tissue of carp contains 37.8% of protein which is much greater that the muscular tissue of salmon does (17.5%). The carp meat contains also more lipids and ashy substances. In connection with a great portion of muscular bones in a carp body to use repining agents is required. There were tested 4 samples of ripening agents. Their exposure lasted 60-80 h at 4-6 degrees C. The carp fillet treated by solutions Fish ripening agent art. 50954 and Sal Intersor 3 for 72 h had the best organoleptic characteristics. Pathogenic microorganisms in samples of sushi and rolls were detected in amounts not exceeding the allowable amounts, as the ripening agent demonstrated a bacteriostatic effect. Carp sushi and rolls contain the entire range of essential amino acids, they are rich in calcium, potassium, phosphor and magnesium. The digestibility of the experimental sample in vitro was higher by 34% than the digestibility of the control sample (salmon). It is concluded that the Japanese cuisine dishes made by using a carp fillet are biologically full value products having high consumer qualities and can be included into the menu of public catering enterprises

俄语. В качестве сырья для производства суши и роллов использовали мясо карпа. В мышечной ткани карпа содержится 37,8% белка, что значительно больше, чем в мышечной ткани лосося (17,5%). Мясо карпа содержит также больше липидов и зольных в-в. В связи с большой долей мускульных костей в теле карпа необходимо применение созревателей. Испытывали 4 образца созревателей, воздействие которых продолжалось 60-80 ч при t 4-6 град. С. Лучшими органолептическими показателями обладало филе карпа, обработанное р-рами "Созреватель для рыбы арт. 50954" и "Сал Интенсор 3" в течение 72 ч. Патогенные микроорганизмы в образцах суши и роллов были обнаружены в количествах, не превышающих допустимые, т.к. созревающий р-р проявлял бактериостатическое действие. Суши и роллы из карпа содержат полный набор незаменимых аминокислот, они богаты кальцием, калием, фосфором и магнием. Переваримость опытного образца in vitro была на 34% выше, чем переваримость контрольного (из лосося). Сделан вывод, что блюда японской кухни, изготовленные с использованием филе карпа, являются биологически полноценными продуктами, обладают высокими потребительскими качествами и могут быть включены в меню предприятий общественного питания.
